Xmas Cranberry Eton Mess

Ingredients
150g bag Cinderella Cranberries
¼ cup Cointreau or fresh orange juice
3 cups (600g) natural Greek yoghurt
6 small meringues, crushed
12 marshmallows, cut into quarters
¼ cup sliced almonds, toasted
Method
- Place Cinderella Cranberries in a bowl. Pour over Cointreau or orange juice. Stand for 2-4 hours, or overnight to allow the liquid to absorb and plump up the cranberries.
- Put Greek yoghurt into a mixing bowl. Add the Cinderella Cranberries (reserving a few to garnish) with the crushed meringues and marshmallows. Carefully mix together to combine ingredients.
- Divide the mixture between 6 individual serving dishes. Top with the reserved Cranberries and toasted almonds just before serving.
Notes
- Eton mess can be made and kept in the fridge for up to 2 hours before serving.
- Use scissors to cut the marshmallows.
- To toast the almonds put into a small frying pan and toast over a low heat, shaking the pan regularly until golden.
