Spiced Fig Loaf

1 cup flour
¾ cups baking powder
½ tsp baking soda
2 tsp ground ginger
1 tsp ground mixed spice
1 tsp ground cinnamon
¾ cup wholemeal flour
½ cup (tightly packed) soft brown sugar
200g Cinderella Figs, roughly chopped
150g butter
½ cup golden syrup
2 (no 7) eggs
¾ cup milk


  1. Preheat oven to 160°C (conventional bake). Grease and line the base of a loaf tin with baking paper (21cm x 11cm x 7cm).
  2. Sift flour, baking powder, baking soda, ground ginger and mixed spice into a mixing bowl. Add wholemeal flour, brown sugar and stir to mix. Stir in Cinderella Figs.
  3. Gently melt the butter with the golden syrup in a saucepan over a low heat.
  4. Whisk together eggs and milk.
  5. Pour the melted butter and golden syrup with the beaten eggs and milk into the dry ingredient. Stir to mix. Pour into the prepared tin. Bake for 55-60 minutes. A skewer inserted into the middle of the loaf will come out clean. Leave to cool in the tin before turning onto a cooling rack. When cold. Slice. Serve buttered if wished.


Replace golden syrup with 1/2 Cup Cinderella Date Syrup if wished.
