Savoury Bacon and Cheese Muffins

1 ½ cup Cinderella Almond Meal
½ cup grated cheddar cheese (or cheese of your choice)
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon garlic powder
2 tablespoons chopped fresh herbs (such as parsley, chives, or thyme)
3 large eggs
½ cup plain Greek yogurt
¼ cup milk
2 tablespoons olive oil
½ cup sweetcorn kernels
½ cup cooked and chopped bacon
2 tablespoons finely chopped spinach or other veggies (optional)


  1. Preheat your oven to 175°C and grease your muffin tins
  2. In a large bowl, whisk together the almond meal, baking powder, baking soda, salt, and garlic powder until well combined.
  3. In another bowl, beat the eggs until well mixed. Add in the Greek yogurt, milk, and olive oil. Whisk until smooth.
  4. Gradually add the wet mixture to the dry mixture and stir until just combined.
  5. Gently fold in the grated cheese, chopped herbs, sweetcorn, chopped bacon, and chopped spinach or veggies if using.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake in the preheated oven for about 20-25 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
