Passionfruit Cheesecake Slice

Ingredients
For the base:
2 cups oats
1 cup Cinderella Almond Meal
200g Cinderella Camel Dates
For the cheesecake:
2 cups cashews, soaked in boiling water for 5 minutes
240g vegan cream cheese
2 tbsp lemon juice
1/2 cup maple syrup
6 passionfruit, fresh or frozen
3 Tbsp coconut yogurt
1 kiwifruit, diced
Method
- Make the base by adding the oats and almond meal to a food processor and pulse until the oats become a flour consistency. Add in the dates and blend until combined. Pour into a lined slice tin and press firmly together. Place in the freezer while you make the cheesecake layer.
- Add the cashews, vegan cream cheese, lemon juice, maple syrup and passionfruit to a food processer or blender and blend until smooth. Pour onto the top of the base layer and place in the freezer to set for 3 hours or more.
- Top with the coconut yogurt and kiwi fruit.
Tips
When passionfruit is not in season, substitute with kiwifruit.
