Nutty Date Biscuits

Ingredients

1 cup Cinderella Camel Dates
¼ cup smooth peanut butter*
½ cup ground almonds
¼ cup cornflour
1 tsp vanilla

Method

  1. Soak Cinderella Camel Dates in boiling water and cover for 5 minutes to soften. Drain and discard liquid. Place dates in a food processor and process until smooth.
  2. Preheat oven to 180°C (fan assisted). In a food processor, mix together pureed dates, peanut butter, ground almonds, cornflour and vanilla until the mixture forms into a soft dough. Roll mixture into 15 even sized balls. Place on a tray lined with baking paper. Flatten biscuits with a fork.
  3. Bake for 10-12 minutes. Allow to cool on the tray before transferring to a wire cake rack to cool completely. Store in an airtight container.

*Use a sugar and salt free peanut butter.
