Maple Walnut Banana Bread

Ingredients
2 cups self-raising flour
1 tsp ground cinnamon
¼ cup raw sugar
½ cup maple syrup
1egg(no7)
1 cup mashed ripe bananas (approx. 2 large bananas)
100g butter, melted
½ cup Cinderella® Walnuts + ¼ cup extra chopped
Method
- Preheat oven to 180°C (conventional bake). Grease and line the base of a 13cmx23cmx7cm (6 cup capacity) loaf tin.
- Sift flour and cinnamon into a mixing bowl.
- In a separate bowl whisk together sugar, maple syrup, egg and mashed bananas. Pour into the dry ingredients with the melted butter. Add Cinderella® Walnuts. Gently stir to mix.
- Spoon into the prepared tin. Scatter over the chopped Cinderella® Walnuts. Bake for 50-55 minutes until cooked. A skewer inserted into the middle of the bread will come out clean. Leave in the tin to cool for 10 minutes before turning onto a cake rack to cool completely. Cut into slices to serve.
Tip
Replace walnuts with ½ cup chopped, dried Cinderella® Apricots and omit the nuts on top of the bread
