Loaded Mashed Potato Balls

Ingredients
2 cups boiling water
1 cup milk
2 tbsp butter
Salt & pepper, to taste
2 ½ cups Cinderella Instant Mashed Potatoes
1/2 cup grated cheese
1 tsp dried chopped chives
4 spring onions, finely sliced
½ cup flour
2 eggs
1 cup panko breadcrumbs
Cooking oil spray
Method
- In a large bowl, combine boiling water, milk, butter, salt, and pepper.
- Gently stir in the Cinderella Instant Mashed Potatoes using a fork until just combined—do not overmix. Let stand for 1 minute to thicken.
- Add grated cheese, dried chives and sliced spring onions to the potato mash. Gently mix until evenly combined.
- Chill the mixture in the fridge for 15-20 minutes for easier handling (optional, but helpful!).
- Scoop about 2 tablespoons of the mash mixture and roll into balls. Place on a baking paper lined tray.
- Set up 3 bowls, in bowl 1 add flour, in bowl 2 add beaten eggs and in bowl 3 add the panko breadcrumbs.
- Roll each ball in flour, dip into egg, then coat with breadcrumbs.
- Preheat the air fryer to 190°C.
- Lightly oil the air fryer basket and arrange the potato balls in a single layer (not touching).
Spray the tops with a little more oil. - Air fry for 10 -15 minutes, turning gently halfway through, until golden brown and crispy.
- Serve hot with sour cream, spicy mayo, or your favourite dip!
