Jumbo Raisin & Chocolate Oat Cookies

200g butter, softened
1 cup soft brown sugar
1 tsp vanilla extract
¾ cup rolled oats
1 ½ cups flour
1 ½ tsp baking powder
100g milk chocolate, roughly chopped
¾ cup Cinderella Jumbo Raisins
- Preheat oven to 180°C ( fan bake). Cream butter, brown sugar and vanilla until light and fluffy. Beat in egg.
- Mix in rolled oats, sifted flour and baking powder with chopped chocolate and Cinderella Jumbo Raisins.
- Roll mixture into balls and place on baking trays lined with baking paper, pressing to flatten the dough a little. Leave room for the biscuits to spread.
- Bake for 15-20 minutes or until golden. Remove from the oven and leave on the tray for 5 minutes before transferring to a cake rack to cool. When cold store biscuits in an airtight container.
