Jumbo Raisin & Chocolate Oat Cookies

200g butter, softened
1 cup soft brown sugar
1 tsp vanilla extract
1 egg
¾ cup rolled oats
1 ½ cups flour
1 ½ tsp baking powder
100g milk chocolate, roughly chopped
¾ cup Cinderella Jumbo Raisins


  1. Preheat oven to 180°C ( fan bake). Cream butter, brown sugar and vanilla until light and fluffy. Beat in egg.
  2. Mix in rolled oats, sifted flour and baking powder with chopped chocolate and Cinderella Jumbo Raisins.
  3. Roll mixture into balls and place on baking trays lined with baking paper, pressing to flatten the dough a little. Leave room for the biscuits to spread.
  4. Bake for 15-20 minutes or until golden. Remove from the oven and leave on the tray for 5 minutes before transferring to a cake rack to cool. When cold store biscuits in an airtight container.
