Homemade Muesli Bars


100 grams butter
1/3 cup golden syrup
1/2 cup brown sugar
1 tsp vanilla extract
1 egg
2 1/2 cups rolled oats
1/2 cup Cinderella Cranberries
1/2 cup Cinderella Raisins
1/2 cup Cinderella Dates
1/2 cup pistachios
1/2 cup almonds
1/3 cup flour
1/4 teaspoon kosher salt
1/4 cup chopped chocolate*


  1. Combine butter, golden syrup, brown sugar and vanilla in a small saucepan over medium heat. Heat through and stir occasionally until butter melts and sugar dissolves. Remove from heat, then stir through egg and whisk well to prevent from cooking. Leave aside.
  2. In a separate large bowl, mix oats, Cinderella dried fruit and nuts, flour and salt, stirring to mix thoroughly. Add the butter mixture and stir well using a spatula. Mix through chopped chocolate.
  3. Line a baking pan with baking paper and press mixture into the base of the pan evenly. Press hard, to make sure that the bars will stay together when cooled and cut.
  4. Bake bars for 12-15 minutes at 180ºC, until golden on top and slightly crunchy looking. Then remove from heat, and allow to cool completely before cutting.

* For this recipe, we used Whittaker’s Dark Block (50% Cocoa)
