Gluten Free Apricot & Almond Friands

½ cup chopped Cinderella Dried Apricots
100 g butter
⅓ cup Cinderella Date Syrup (or sweetener of your choice)
1¼ cups Cinderella Almond Meal
½ cup fine desiccated coconut
Zest of 1 orange
Egg whites from 5 medium-sized eggs
pinch of salt
icing sugar to dust optional


  1. Soak chopped Cinderella Apricots in orange juice for 10 minutes. Preheat oven to 180°C. Lightly grease 8 friand moulds with a little butter.
  2. Melt butter and add Cinderella Date Syrup to it and set aside.
  3. In a large mixing bowl, combine Cinderella Almond Meal, coconut and orange zest.
  4. In a separate mixing bowl, whisk egg whites with a pinch of salt until soft peaks form and the egg mixture is foamy.
  5. Add cooled melted butter mixture and whipped egg whites to almond meal mixture. Fold all the ingredients together using a spatula, until combined (taking care not to over mix).
  6. Divide the batter equally and spoon into greased friand moulds till about 2/3 of the way up. Top each one with a chopped apricots and gently push them into the batter. Bake for 18-21 minutes until risen and tops are golden. A skewer inserted in the middle should come out clean.
  7. Allow to cool in the moulds for a few minutes before transferring to a cooling rack. When cooled, dust with icing sugar.
