Gluten Free Apricot & Almond Friands

Ingredients
½ cup chopped Cinderella Dried Apricots
100 g butter
⅓ cup Cinderella Date Syrup (or sweetener of your choice)
1¼ cups Cinderella Almond Meal
½ cup fine desiccated coconut
Zest of 1 orange
Egg whites from 5 medium-sized eggs
pinch of salt
icing sugar to dust optional
Method
- Soak chopped Cinderella Apricots in orange juice for 10 minutes. Preheat oven to 180°C. Lightly grease 8 friand moulds with a little butter.
- Melt butter and add Cinderella Date Syrup to it and set aside.
- In a large mixing bowl, combine Cinderella Almond Meal, coconut and orange zest.
- In a separate mixing bowl, whisk egg whites with a pinch of salt until soft peaks form and the egg mixture is foamy.
- Add cooled melted butter mixture and whipped egg whites to almond meal mixture. Fold all the ingredients together using a spatula, until combined (taking care not to over mix).
- Divide the batter equally and spoon into greased friand moulds till about 2/3 of the way up. Top each one with a chopped apricots and gently push them into the batter. Bake for 18-21 minutes until risen and tops are golden. A skewer inserted in the middle should come out clean.
- Allow to cool in the moulds for a few minutes before transferring to a cooling rack. When cooled, dust with icing sugar.
