Fig Almond Crumble Bars

Ingredients
Shortbread base
2 Cups Cinderella Almond Meal
1/4 Cup honey/maple syrup (heated to make runny if necessary)
1/4 Cup ghee/butter/coconut oil melted
Fig filling
1/2 Cup smooth almond butter
1 bag of Cinderella Dried Figs (200g)
1 tsp lemon juice
Crumble topping
1/4 Cup of shortbread base mixture
1/3 Cup crushed walnuts
Method
- Preheat the oven to 180°C & line a loaf pan with parchment paper.
- In a medium bowl, combine the almond meal, melted oil/butter & honey. Mix well until it sticks together in your hands.
- Reserve 1/4 cup of this shortbread mixture and place it in a small bowl, set aside.
- Gently press the remaining dough into the lined loaf tin and bake for 10 minutes.
- Remove from oven while it looks golden on top and let cool completely. Do not turn off the oven.
- While it is cooling, make the filling. In a food processor or small blender, add the dried figs, almond butter and lemon juice. Pulse together until a thick paste forms, leaving some dried figs not completely blended.
- Once the base is cool, gently spread the fig mixture over the base to create a thick fig layer.
- Find your reserved 1/4 cup base mixture and add the crushed walnuts, mix well.
- Sprinkle this crumble mixture over the fig layer evenly, then bake in the oven for 12 minutes. Take it out once it is golden on top.
- Let cool completely before dusting with a little icing sugar & slicing into 8-10 squares.
- Keep airtight in the fridge for a week or the freezer for longer if desired!
