Easy Focaccia | Cinderella

Easy Focaccia

one loaf, 6-8 slices

Ingredients

⅔ cup Cinderella Instant Mashed Potatoes 

1 cup boiling water (for mash) 

½ teaspoon sea salt 

½ teaspoon black pepper, freshly ground 

2 cups (300 grams) flour 

2 teaspoons instant yeast 

1 teaspoon cooking salt 

1 ¼  cups warm water (for dough) 

2-3 tablespoons olive oil 

Method

  1. In a small bowl add the potato flakes, boiling water, salt and pepper and stir gently to combine.  
  2. In a large bowl mix the flour, yeast, cooking salt, warm water, and mashed potato together until a shaggy dough forms.  
  3. Cover the bowl and rest for 30 minutes. Perform a series of stretches and folds by lifting one side of the dough and folding it over itself. Rotate the bowl and repeat until you have completed 4 folds. Cover and leave to rise until almost doubled in size. 
  4. Preheat oven to 200C. 
  5. Line and/or oil a 23 x 33 cm (approx is fine) tin with plenty of good-quality olive oil. Tip the dough into the tray and turn to completely coat in the oil. Use your fingers to press the dough to the corners of the tray in an even layer. 
  6. Cover with plastic wrap and rise another 30 minutes until risen and puffy. 
  7. Using your fingers, press dimples into the top, making deep divets but not punching too much of the air out.  
  8. Sprinkle with sea salt and bake for about 22-25 minutes until deep golden brown.  
  9. Cool in tin before slicing into wedges or squares 

Before baking you can top with any of your favourite ingredients, including herbs and parmesan, pizza sauce and mozzarella, or ham and cheese!
