Creamy Potato & Gravy

Ingredients
Potato:
1 1/3 cups Cinderella Instant Mashed Potatoes
1 tsp salt
2 Tbsp butter
1/2 cups milk
1 1/2 cups boiling water
Gravy:
2 cups boiling water
2 beef stock cubes
4 Tbsp butter
4 Tbsp plain flour
Salt and pepper, to taste
Method
- To prepare the Potato: Combine the salt, butter, milk, and boiling water in a large bowl.
- Add the Cinderella Instant Mashed Potatoes and gently stir with a fork. DO NOT WHIP. Leave to rest for one minute, then gently stir again to fluff up.
- Spoon the mashed potato into individual ramekin, if wished.
- To prepare the Gravy: Pour the boiling water into a measuring jug and dissolve the beef stock cube into it, whisking to ensure there are no lumps.
- Heat a small saucepan on medium and melt the butter. Whisk in the flour, and then gradually whisk in the beef stock. As it thickens, season with salt and pepper to taste.
- Pour the gravy over the mashed potato and serve with fries or crispy chicken for dipping.
