Creamy Potato & Gravy

Ingredients

Potato:
1 1/3 cups Cinderella Instant Mashed Potatoes
1 tsp salt
2 Tbsp butter
1/2 cups milk
1 1/2 cups boiling water

Gravy:
2 cups boiling water
2 beef stock cubes
4 Tbsp butter
4 Tbsp plain flour
Salt and pepper, to taste

Method

  1. To prepare the Potato: Combine the salt, butter, milk, and boiling water in a large bowl.
  2. Add the Cinderella Instant Mashed Potatoes and gently stir with a fork. DO NOT WHIP. Leave to rest for one minute, then gently stir again to fluff up.
  3. Spoon the mashed potato into individual ramekin, if wished.
  4. To prepare the Gravy: Pour the boiling water into a measuring jug and dissolve the beef stock cube into it, whisking to ensure there are no lumps.
  5. Heat a small saucepan on medium and melt the butter. Whisk in the flour, and then gradually whisk in the beef stock. As it thickens, season with salt and pepper to taste.
  6. Pour the gravy over the mashed potato and serve with fries or crispy chicken for dipping.
