Chewy Goji Berry Muesli Bars

Ingredients
1½ cups rolled oats
¼ cup Cinderella Pumpkin Seeds
¼ cup Cinderella Sunflower Seeds
¼ cup Cinderella Almonds, chopped
¾ cup Cinderella Goji Berries
40g butter
3 tbsp honey
2 tbsp coconut oil
1½ tbsp peanut butter (optional—can substitute with extra coconut oil)
2 tsp vanilla extract
Method
- Preheat oven to 150°C (fan bake). Lightly grease and line the base and sides of a small rectangle or square baking dish.
- In a large mixing bowl, combine rolled oats, Cinderella Pumpkin Seeds, Sunflower Seeds, chopped Almonds and Goji Berries.
- In a saucepan, gently heat butter, honey, coconut oil, peanut butter (if using) and vanilla extract until warm and combined.
- Pour the warm mixture over the dry ingredients and mix until evenly coated.
- Press the mixture firmly into the prepared baking dish, ensuring it is tightly packed fora chewy texture.
- Bake for 35–40 minutes, or until evenly golden brown.
- Remove from the oven and allow to cool completely before cutting into 10 bars. For clean slices, refrigerate for 20 minutes to fully set before slicing.
- Store in an airtight container.
