Chewy Goji Berry Muesli Bars

Ingredients

1½ cups rolled oats

¼ cup Cinderella Pumpkin Seeds

¼ cup Cinderella Sunflower Seeds

¼ cup Cinderella Almonds, chopped

¾ cup Cinderella Goji Berries

40g butter

3 tbsp honey

2 tbsp coconut oil

1½ tbsp peanut butter (optional—can substitute with extra coconut oil)

2 tsp vanilla extract

Method

  1. Preheat oven to 150°C (fan bake). Lightly grease and line the base and sides of a small rectangle or square baking dish.
  2. In a large mixing bowl, combine rolled oats, Cinderella Pumpkin Seeds, Sunflower Seeds, chopped Almonds and Goji Berries.
  3. In a saucepan, gently heat butter, honey, coconut oil, peanut butter (if using) and vanilla extract until warm and combined.
  4. Pour the warm mixture over the dry ingredients and mix until evenly coated.
  5. Press the mixture firmly into the prepared baking dish, ensuring it is tightly packed fora chewy texture.
  6. Bake for 35–40 minutes, or until evenly golden brown.
  7. Remove from the oven and allow to cool completely before cutting into 10 bars. For clean slices, refrigerate for 20 minutes to fully set before slicing.
  8. Store in an airtight container.
