Apple, Date & Sultana Muffins

1 cup wheat baking bran
1 cup wholemeal flour
1 cup flour
2 tsp baking powder
1 tsp ground cinnamon
100g butter
½ cup Cinderella Date Syrup
1 ¼ cups natural unsweetened yoghurt
2 eggs
1 tsp baking soda
1 apple, grated
¾ cup Cinderella Sultanas


  1. Preheat oven to 200°C (fan bake). Grease a deep 12 hole muffin tin.
  2. Put bran, wholemeal flour, flour, baking powder and cinnamon into a mixing bowl and stir to mix.
  3. Melt the butter with Cinderella Date Syrup.
  4. Whisk together yoghurt, eggs and baking soda.
  5. Make a well in the centre of the dry ingredients. Add yoghurt mixture and melted butter and date syrup along with the grated apple and Cinderella Sultanas. Carefully mix together to combine ingredients. Spoon mixture into prepared muffin tin. Bake for 12-15 minutes until muffins are golden and spring back when lightly touched in the middle. Leave for 5 minutes before transferring to a cake rack to cool.
