Ingredients
1 cup Cinderella® Sunflower Seeds
¼ cup Cinderella® Pumpkin Seeds
¼ cup Cinderella® Chia Seeds
1 cup oats
1 tsp ground cumin
½ tsp ground coriander
1 tsp salt
1 cup warm water
1 Tbsp honey
¼ cup olive oil
Method
- Put all the ingredients into a mixing bowl. Stir to mix well. Allow to stand for 20 minutes, stirring occasionally, until the liquid has been absorbed. The mixture will be thick like porridge.
- Preheat oven to 140°C (fan assisted). Line 2 trays with baking paper. Using a flat metal spatula spread the mixture out into a thin layer on the trays, ensuring there are no holes in the mixture.
- Bake for 60 minutes until crackers are golden and crisp. Cool on the trays before breaking into pieces. Store in an airtight container.
Tips
- Brush the spatula with a little oil before spreading to stop the mixture sticking to the spatula.
- Make sure to spread the mixture out as thin as possible to ensure crackers will be crisp.
- If you are cooking on 2 racks, switch the trays halfway through cooking to ensure even baking.
- Add 2 Tablespoons of finely chopped fresh rosemary to the mixture, if wished.
- Replace the cumin and coriander with 1 tsp smoked paprika and 1 tsp dried oregano.
