Seedy Oat Crackers

Ingredients

1 cup Cinderella® Sunflower Seeds

¼ cup Cinderella® Pumpkin Seeds

¼ cup Cinderella® Chia Seeds

1 cup oats

1 tsp ground cumin

½ tsp ground coriander

1 tsp salt

1 cup warm water

1 Tbsp honey

¼ cup olive oil

Method

  1. Put all the ingredients into a mixing bowl. Stir to mix well. Allow to stand for 20 minutes, stirring occasionally, until the liquid has been absorbed. The mixture will be thick like porridge.
  2. Preheat oven to 140°C (fan assisted). Line 2 trays with baking paper. Using a flat metal spatula spread the mixture out into a thin layer on the trays, ensuring there are no holes in the mixture.
  3. Bake for 60 minutes until crackers are golden and crisp. Cool on the trays before breaking into pieces. Store in an airtight container.

Tips

  1. Brush the spatula with a little oil before spreading to stop the mixture sticking to the spatula.
  2. Make sure to spread the mixture out as thin as possible to ensure crackers will be crisp.
  3. If you are cooking on 2 racks, switch the trays halfway through cooking to ensure even baking.
  4. Add 2 Tablespoons of finely chopped fresh rosemary to the mixture, if wished.
  5. Replace the cumin and coriander with 1 tsp smoked paprika and 1 tsp dried oregano.
