No-Bake Fig & Apricot Cocoa Rolls

Ingredients
1 cup Cinderella Figs
½ cup Cinderella Apricots
½ cup Cinderella Dates
1 cup Cinderella Walnuts, roughly chopped
¼ cup unsweetened cocoa powder
1 tbsp fresh orange juice
1 tsp finely grated orange zest
Method
- To soften the figs, apricots or dates feel (if firm), soak them in hot water for 5 minutes. Drain well and pat dry.
- Add figs, apricots, dates, walnuts, cocoa powder, orange juice and zest to a food processor. Pulse until the mixture comes together into a sticky, slightly textured dough. (Avoid over-processing, you still want some nutty crunch.)
- Lay a sheet of baking parchment on your bench & cut into 3 pieces. Divide the mixture into 3 portions. Roll each portion into a log, about 3–4 cm in diameter, using the parchment to help shape it tightly.
- Twist the ends of the parchment like a bonbon wrapper to secure. Place the logs in the fridge for at least 2 hours, or until firm.
- Once chilled, unwrap and slice into rounds. Serve with cheese, crackers, or enjoy on their own as a naturally sweet snack.
Tip:
Keep tightly wrapped in the fridge for up to 2 weeks, or freeze for up to 2 months.
