Savoury Bacon and Cheese Muffins

Ingredients
1 ½ cup Cinderella Almond Meal
½ cup grated cheddar cheese (or cheese of your choice)
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon garlic powder
2 tablespoons chopped fresh herbs (such as parsley, chives, or thyme)
3 large eggs
½ cup plain Greek yogurt
¼ cup milk
2 tablespoons olive oil
½ cup sweetcorn kernels
½ cup cooked and chopped bacon
2 tablespoons finely chopped spinach or other veggies (optional)
Method
- Preheat your oven to 175°C and grease your muffin tins
- In a large bowl, whisk together the almond meal, baking powder, baking soda, salt, and garlic powder until well combined.
- In another bowl, beat the eggs until well mixed. Add in the Greek yogurt, milk, and olive oil. Whisk until smooth.
- Gradually add the wet mixture to the dry mixture and stir until just combined.
- Gently fold in the grated cheese, chopped herbs, sweetcorn, chopped bacon, and chopped spinach or veggies if using.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for about 20-25 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
