Spiced Fig Loaf

Ingredients
1 cup flour
¾ cups baking powder
½ tsp baking soda
2 tsp ground ginger
1 tsp ground mixed spice
1 tsp ground cinnamon
¾ cup wholemeal flour
½ cup (tightly packed) soft brown sugar
200g Cinderella Figs, roughly chopped
150g butter
½ cup golden syrup
2 (no 7) eggs
¾ cup milk
Method
- Preheat oven to 160°C (conventional bake). Grease and line the base of a loaf tin with baking paper (21cm x 11cm x 7cm).
- Sift flour, baking powder, baking soda, ground ginger and mixed spice into a mixing bowl. Add wholemeal flour, brown sugar and stir to mix. Stir in Cinderella Figs.
- Gently melt the butter with the golden syrup in a saucepan over a low heat.
- Whisk together eggs and milk.
- Pour the melted butter and golden syrup with the beaten eggs and milk into the dry ingredient. Stir to mix. Pour into the prepared tin. Bake for 55-60 minutes. A skewer inserted into the middle of the loaf will come out clean. Leave to cool in the tin before turning onto a cooling rack. When cold. Slice. Serve buttered if wished.
Notes
Replace golden syrup with 1/2 Cup Cinderella Date Syrup if wished.
