Chewy Museli Fruit Slice

Ingredients

2 cups rolled oats
1 cup desiccated coconut
¼ cup pumpkin seeds
¼ cup sunflower seeds
½ cup slivered almonds
1 cup Cinderella Raisins
¾ cup Cinderella Date Syrup
6 Tbsp vegetable oil
1 tsp vanilla extract

Method

  1. Lightly grease and line the base and sides of a 23cm square cake tin.
  2. Place rolled oats, coconut, pumpkin and sunflower seeds, almonds and Cinderella Raisins into a mixing bowl.
  3. Gently heat the Cinderella Date Syrup, and oil in a saucepan until warm stirring to combine. Pour into the dry ingredients with the vanilla and mix together until well combined. Press mixture firmly into the cake tin ensuring you a have a smooth surface.
  4. Bake at 150°C (fan bake) for 35-40 minutes, or until slice is an even golden brown. Remove from the oven. Cool completely in the tin before cutting into pieces. Store in an airtight container.
